For the Macaron Shells:

  • 1 cup almond flour (finely sifted)

  • 1 ¾ cups powdered sugar

  • 3 large egg whites (room temp, aged)

  • ¼ cup granulated sugar

  • 1 tsp cotton candy extract

  • 23 drops gel food coloring (pink, blue, or lavender)

For the Cotton Candy Buttercream Filling:

  • ½ cup unsalted butter, softened

  • 1 cup powdered sugar

  • 1 tsp cotton candy extract

  • 1 tbsp heavy cream (optional, for smooth texture)

  • Pinch of salt

Instructions

  • Sift almond flour and powdered sugar together twice. Set aside.

  • Whip egg whites in a grease-free bowl until foamy, then gradually add granulated sugar. Continue whipping until stiff peaks form.

  • Add cotton candy extract and food coloring to the meringue.

  • Fold the dry ingredients gently into the meringue using a spatula (macaronage). Batter should flow like lava.

  • Pipe 1.5-inch circles onto parchment-lined baking sheets using a round tip. Tap tray to remove air bubbles.

  • Rest macarons uncovered for 30–45 minutes until a skin forms and tops are dry to the touch.

  • Bake at 300°F (150°C) for 15–18 minutes. Let cool completely.

  • Make filling: Cream butter until fluffy. Add powdered sugar, cotton candy extract, salt, and cream. Beat until smooth.

  • Fill: Pipe buttercream onto one shell and sandwich with another.

 

  • Mature in fridge for 24 hours for best texture. Serve at room temp.
